Its flavour is earthly, bitter and pungent.
It is widely used to flavour or colour curry powders, and mustards.
It is commonly found in various cuisines across the globe such as
– Asian meals like meat, curry, and vegetables
– Persian dishes as starters
– Vietnamese soups and stir-fries
– Cambodia dishes i.e curry paste and seasoning
– Thai meals i.e yellow curry, soups
– African dishes esp. boiled white rice
